Vegan Avocado Pesto

This has to be the simplest version of the Avocado Pesto Pasta. Quick, easy, yummy and sooo good for you!

Perfect for one of those days when you are too tired to spend more than 10 minutes in the kitchen. Just whip this pesto up in a jiffy and throw in some pasta and dinner is ready!

I used 100% organic quinoa pasta but feel free to substitute as per your preference.

Ingredients: (1 serving)

– Organic Quinoa Spaghetti 4oz

– 1 Ripe Avocado

– A finely minced clove of garlic

– 1 tbsp Olive Oil

– 1 tbsp Lemon Juice

– Pinch of Cayenne pepper

– Pinch of salt and pepper

– Pinch of Chili Pepper for Garnishing

– Pinch of All Purpose Vegetable Seasoning (optional for extra flavor)

Instructions:

Boil spaghetti for 5-8 minutes.

In a bowl, mash the avocado and mix in all the seasoning and lemon juice until the texture is smooth and creamy.

Place the spaghetti on a plate and serve with pesto on top.
