This delicious homemade ice cream is so good for you it can be eaten for breakfast! Healthy, tasty and guilt free 😊 – made with coconut milk, bananas and pure maple syrup as base.
To add flavors you can include peanut butter, cocoa, protein powders or other fruits.
1 can coconut milk
1 fully ripe banana
2 tablespoon 100% pure maple syrup
Refrigerator a can of coconut milk for a few hours. Remove the can from the fridge and you will see that the cream will be separated from the coconut water on the top, remove the cream to use for this recipe (you can use the coconut water for smoothies later). Place the coconut cream into a food processor (you can even use a hand mixer if you don’t have a processor) add one fully ripe banana (ripe bananas are sweeter) and 2 tablespoon maple syrup. Run the food processor for a few seconds or till the ingredients are fully mixed.
Place the mixture into the freezer for an hour or two, scoop out and serve.
This recipe is for plain ice cream, however some of my favorite flavors to add are vanilla (use vanilla powder) blueberries and peanut butter.
