Peanut Butter Granola

This is a super easy recipe for homemade peanut butter granola.  I love the taste of toasted, crunchy granola for breakfast and I think just about everything tastes better with peanut butter.

Most of the store bought granola is loaded with processed sugar and not very healthy. So, I love to make my own at home. This recipe includes oats, almonds, chia seeds and is a great way to kick start the day.

You can make it over the weekend and store it in a mason jar in the fridge. It will last you 5-7 days.

Recipe:

1 cup oats

3 tbsp peanut butter

1 tsp coconut oil

1/4 cup honey (agave or maple syrup for vegans)

2 medjool dates /4 smaller dates

1/2 cup brown rice flakes

1/4 cup crushed almonds

1 tbsp chia seeds

Directions:

Toast the oats in the oven for 10 minutes (you can make it without toasting the oats but the taste is definitely a lot better when toasted)

Blend the pitted dates in the blender till it has dough like consistency.

Melt the honey, peanut butter and coconut oil in the microwave for about 30 seconds. When it mixture has melted, give it a stir and then mix in all the dry ingredients.

Mix well and transfer into a container and freeze for 30 minutes. Remove from the granola from the container into a airtight jar and store in the fridge.
